Round and dry with quince, walnut, and yellow apple notes, you'll want to pair this with something rich and flavorful. We'd love to have this with a Chinese braised Red Snapper, or 'Hong Shao Yu'. Heat oil in a pan or wok and fry some ginger, before adding your fish, scallions, shaoxing wine (yellow rice wine), Chinese black vinegar, and soy sauce. Reduce the heat to medium low, and continuously spoon the
